Ingredients

  • 1 cup quinoa

  • 2 cups water

  • 1 tablespoon olive oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 red bell pepper, diced

  • 1 can (14 ounces) diced tomatoes

  • 1 teaspoon paprika

  • 1 teaspoon thyme

  • 1/4 teaspoon cayenne pepper (optional)

  • Salt and pepper to taste

  • 4 boneless, skinless chicken breasts

  • Cooking spray

Directions

  • Rinse the quinoa under cold water to remove any bitterness. In a saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat and simmer for about 15-20 minutes, or until the quinoa is tender and the water is absorbed.
  • In a separate large pan, heat olive oil over medium heat. Add the diced onion, minced garlic, and diced red bell pepper. Cook until the vegetables are softened.
  • Stir in the diced tomatoes with their juices, paprika, thyme, cayenne pepper (if using), salt, and pepper. Cook for another 5 minutes to allow the flavors to meld together.
  • While the sauce is simmering, preheat a grill or grill pan over medium-high heat. Season the chicken breasts with salt and pepper. Spray the grill with cooking spray, then grill the chicken breasts for about 6-8 minutes per side, or until cooked through.
  • Fluff the cooked quinoa with a fork and add it to the pan with the sauce. Stir well to combine.
  • Serve the Jollof Quinoa with grilled chicken breast on top.
