Pap(ogi) is a traditional South African porridge made from maize meal. Here’s a step-by-step guide on how to make it:

Ingredients

  • 2 cups of maize meal

  • 4 cups of water

  • 1 teaspoon of salt (optional)

Directions

  • In a large pot, bring the water to a boil.
  • In a separate bowl, mix the maize meal with a little bit of water to form a smooth paste. This helps to prevent lumps from forming in the porridge.
  • Slowly pour the maize meal mixture into the boiling water while stirring continuously with a wooden spoon or whisk. This step helps to evenly distribute the maize meal and prevent lumps.
  • Reduce the heat to low and cover the pot with a lid. Allow the pap to simmer for about 20-30 minutes, stirring occasionally to prevent it from sticking to the bottom of the pot.
  • After about 20-30 minutes, the pap should have thickened to a smooth and creamy consistency. If it seems too thick, you can add a little more water and continue cooking until desired consistency is reached.
  • If desired, add salt to taste and stir it into the pap.
  • Once the pap is ready, remove it from the heat and let it sit for a few minutes to cool slightly before serving.
  • Pap can be served with a variety of toppings such as butter, cheese, milk, sugar, or even meat or vegetable stews. It can be enjoyed as a side dish or a main meal depending on the accompaniments
